I made this dish earlier in the year, and have spent the past several months designing and making mokuzuke dishes; small dishes that were adapted for use in the tea ceremony in Japan during the Edo period. Originally they were used in light meals served for the tea ceremony but now you can see them at kaiseke or sushi restaurants, when you order multiple courses, and each course is served in a different type of ceramic dish, representing the various types of ceramics from all over Japan.
